BBQ Pork meatballs on taggliatelle

300 grams of guiltfree sausage meat

300grams of taggliatelle

1 medium onion chopped

1 aubergine chopped into inch pieces

1 red & yellow pepper chopped

200 grams of mushrooms

500grams of passata

1 tsp mild chilli powder

3 tbsp artificial sweetner

4 tbsp balsamic vinegar

1 tbsp worchester sauce

1/2 tsp of mustard powder

low calorie spray oil (WST recommended rapseed oil spray)




Meatballs –

roll the pork sausage meat into 12 balls and seal off and brown in a hot pan with a few sprays of low calorie spray oil. Once brown place covered in a preheated oven for 15-20 mins.

Sauce –

While the meatballs are in the oven in a pan, saute off the finely chopped onion with the chilli & mustard powder. Add the passata, balsamic vinegar and worchester sauce  and simmer for 10-15 mins

In the same pan used to brown off the meatballs saute off the chunky veg with the low calorie spray oil for 5 mins then add the BBQ sauce

While the BBQ sauce & veg is simmering, in a pan of boiling water add the taggliatelle and cook as directed on the pkt for around 10 mins, drain and serve

Place the meatballs on top and pour over the chunky veg in BBQ sauce
